Chicken and chickpea stew

Ingredients
10-12 skinless, boneless chicken thighs
1 large onion, chopped
3 cloves garlic, minced
2 14 oz. cans diced tomatoes
1 14 oz. can chickpeas, rinsed
4 sprigs fresh rosemary
1 T thyme
Black pepper to taste
1 c red wine
1/2 cup Greek olives, chopped
Parmesan or Romano cheese

Directions
Lightly sprinkle thighs with pepper and saute until golden brown. Saute onions until translucent. Then add garlic and cook additional 5 minutes. In a large baking pan, place chicken and top with onion mixture and remaining ingredients. Cover and cook in oven and 375° for one hour. Stir and cook additional 1/2 hour. Serve with pasta and plenty of cheese.
