dessert, but I usually feel compelled to make a full meal for my husband. Sometimes I wish I could just shake off that feeling of obligation to follow traditional patterns.

I meant to make some soup, but never got around to it. I guess that will be tomorrow's entertainment, along with some bread baking.

And refried borlotti beans.

I don't bother to fry tortilla strips anymore for tortilla soup, I just break nachos into it, which makes it much easier to clean up.

I always have a bag of locally made low-salt tortilla chips in the house, so I just crumble some of those in.

Altho I must say that frying the tortilla strips makes a kitchen smell like a tacqueria, and I miss that.

Migas is a tex mex omelet made with crumbled tortilla chips, onions, and lots of cheese. I covered it with chopped cilantro and cherry tomatoes.

Have you ever had this? It's spinach cooked in garlic-flavored olive oil and then combined with pine nuts and sultanas. Totally outrageous.

Then some cod with sauce.

Walnut-apple pie for dessert.

Meatloaf and mashed potatoes with steamed corn on the side. It snowed here again today and I'm so tired of it. I'm ready for April.
