Raw, low fat zucchini hummus

2 large zucchini, washed, peeled and roughly chopped
4 T. sesame seeds (soaked and sprouted are best for optimum nutrition, but you can just soak for an hour or two, or not at all if you're pressed for time - just make sure you use a high-speed blender)
2-3 cloves garlic, peeled
2-4 T. lemon juice, to taste
1 tsp. cumin (or to taste)
salt to taste

Place all ingredients in a high speed blender (does not have to be a Vitamix, my Oster kicks ass!) and blend until very smooth. Adjust seasonings as desired. If your blender is not very powerful, and you're not soaking your seeds, you might want to grind the sesame seeds in a coffee grinder before adding them to the blender.

You can eat this with raw crudités or dehydrated flax seed crackers if you want a 100% raw snack, or eat with pita chips. I like this stuff better than regular chickpea hummus, and I love that too! It's also really yummy on baby field greens as a dressing.

Sometimes I add some grape tomatoes, but always make a huge bowl of mixed spring greens. They have every flavor to satisfy any cravings.

With olive oil and lemon juice, little sea salt and pepper. They are SO GOOD FOR YOU!!! Love them.
