Zucchini Pancakes. These were awesome, I must say.

Ingredients
2 medium size zucchini, grated
2 eggs
1/2 c flour (approx.)
pinch of nutmeg
1/2 onion, grated
sour cream
papriks

Directions
In a large mixing bowl, grate zucchini and onion. Squeeze several times to get as much moisture out of the zucchini as possible. after about 10 minutes add eggs and nutmeg. Then add flour until it's the same consistency as pancake batter. Fry in a frying pan in vegetable oil as you would pancakes. Top with a dollop of sour cream and paprika.

However, a few years ago I ran across a blog posting that maintained they were better with a smaller amount of flour. If I can find that blog post, I'll copy and paste it here.

I've found I do like them with the smaller amount of flour.

However, there's another recipe for Turkish zucchini pancakes that has walnuts in it. It, too, is good.
