GAAAh! Was this one of you guys ideas? I don't know where I saw it! Mini egg, cheese & veggie cups

Maybe I saw it on facebook, cause I just looked through the threads below and I don't see it.....

Anyway...

Quick, simple idea for a snack, breakfast, lunch or dinner (like I just did).

Use either a muffin tin or ramekins like I did.

Dice up whatever veggies you want but leave them raw. If you use a muffin tin, figure about one half a beaten egg per tin, depending on how big they are. For the ramekins I have, I used 4 eggs between them.

Spray Pam or coat with olive oil or some fat.

Place a portion of the chopped veggies in the bottom of each and season - I used S & P, garlic powder, some basil and some dill and mixed it with a fork.

In a bowl, whisk your eggs and a bit of cream. For 4 eggs I added probably 3 TBSp of heavy cream, then poured that into a measuring cup to see how much it was and to be able to split it evenly.

Poured that over the veggies and placed a little mound of shredded cheddar on top.

Baked at 425 for 25 minutes and........


They came out looking like this;






I just used a spatula to remove them and plated they looked like this;





At 25 minutes the eggs were done as a soft scramble. A muffin tin is going to take less I would think, probably 15 to 20 max.

If it was one of you folks, THANKS! If it wasn't, well....try em' anyway! They were yum and just too simple. Great idea, wherever it came from!

I rendered it out a bit - not crisp at all, then chopped it fine and sprinkled throughout. Ham chunks, sausage..hell ANYTHING!

Looks wonderful! Gosh, I've been adding so many recipes from this group. I've only been a DUer for, oh, I don't know, 100 years! Why on earth did it take me so long to join this group?!

It really is simple. Another one of those "I got all this crap but no food!" type things.

Take all the crap, put it in a muffin tin, cover with a beaten egg, bake and you're done!


How's the pup pups?

My babies are good, just hotter than hades here!

I don't eat meat anymore ( although bacon makes me drool ) I'll have to check this out!

You make it look so damn easy though! If you are ever in the Austin area please look me up, we can cook and have some Boston love time!

When I started with this firm in Sept of 2011 we had traffic going to DFW, Houston, San Antonio, Austin and as far as El Paso out of Jacksonville and Brunswick, GA.

No more. Furthest west I've been in 12 months was Memphis about 3 weeks ago.


But....if that changes, I'll let you know!
