(111,245 posts)I saw chicken chorizo on sale at the health food store and just couldn't pass it up. It's cool enough to cook today but it won't be later in the week, so it's taco week at my house.

(35,658 posts)I'm making lamb roast stuffed with arugula and red peppers.
Layered salad with garbanzos and fresh peas; also has carrots, peppers, tomatoes, scallions, etc.
Brown rice pilaf.
For dessert: peaches with lemon and mint.

(135,060 posts)One shallot sliced really thin and quickly fried in a knob of butter. When done remove shallots and set aside. Then add a bit of olive oil to pan and heat to med high and add spinach and salt and pepper. Move it around rapidly until the spinach is your desired "wilt" (?) add the shallots and a splash of balsmaic and you're done.
If you don't have shallot, onions or garlic work nicely as well. I sometimes add Cannellini beans and garbanzos as a main dish.

(9,791 posts)Boneless pork loin roast, veggie skewers and sweet corn. I used the pork rub by McCormick Grill Masters on the roast last night. Wrapped it up in foil to marinate overnight and put it on the grill about 1 1/2 hours before we wanted to eat. The daughter used mushrooms, zucchini, Cubanelle peppers and Mountain Magic tomatoes from the garden and red onion on the skewers. The corn was cleaned, wrapped in foil and the grill and everything was delicious!
