What can you do with the perfect egg?

My post on making the Perfect Egg may seem a bit complicated to make an egg in the shell, but I thought I might mention the culinary possibilities they create.

I often have a dozen or so of these eggs in my refrigerator, and I've found lots of uses for them. Besides just eating them as is (which is quite nice), one great benefit to them is you essentially have an egg custard right in the shell which you can use at any time. For breakfast I will break open a couple in a small bowl, microwave for 25 seconds, and mix the yolk and whites together, and spread on a toasted English muffin under a slice of browned Canadian bacon. For lunch I can make a simple egg salad with a bit of finely chopped shallot, some pickle relish, bacon bits, and seasoning. You don't need to add mayo and it still makes the best egg salad you've ever had. For desert at dinner you can mix a couple of them in a mixer with a bit of sugar, and vanilla extract, fold that into some whipped cream, fill a mini pie shell, and top with more whipped cream and chopped pecans. I often have some leftover smoked chicken which I use to make chicken salad with these eggs. Since they are in a custard like state, you don't need to use as much mayo.

and wouldn't want to. I cook my egg in a pan, either over easy or scrambled. I sometimes make migas: onion, garlic, a few tortilla chips, cheese, and egg served with salsa. For a desert or brunch I'll make crepes with fruit. I love deviled eggs but typically only make them for company,

Unfortunately, by the time I was old enough to confront a soft boiled egg in an egg cup (yes, we had 6), she had ruined enough of them hard boiled, scrambled and fried that I couldn't get eggs past my nose. She didn't mind much, cold cereal was easy.

I still get a slightly queasy feeling when confronted by one, although I eat them in things. About the eggiest thing I'll eat is egg foo yong, where strong veggies disguise the sulfur flavor.

It's really horrible to have so many things ruined in childhood. Fortunately, my parents were well enough off that I ate in a lot of restaurants and learned what food was supposed to taste like that I later learned how to cook.

Just don't expect me to eat a perfect egg all by itself, thanks.
