"We can Pickle that!" What is the oddest thing you've pickled?

The new season of “Portlandia” opens with the return of Bryce and Lisa – but instead of putting birds on things, they’ve become master picklers with the catch-phrase “We can pickle that.”

Bonus points if it can be ready to eat by the 6th

I love Portlandia cause I live it!

Well it isn't weird, but I like hard-boiled eggs with beets and pearl onions. HopeHoops Jan 2012 #1
that sounds rather yummy.. Viva_La_Revolution Jan 2012 #2
It's easy. Alternate what you add (for appearance) and cover in hot vinegar. HopeHoops Jan 2012 #4

I usually make them in a 1/2 gal. mason jar and they actually ARE ready in a couple of days. They'll keep in the fridge for about a month. Don't try canning them.

I've used both cider vinegar and white vinegar. Both will work just fine, but I prefer the flavor of cider vinegar. I also mix in basic pickling mix as I build the layers. Don't pack them tightly. The vinegar needs to get all the way around the eggs. They're pretty and make killer deviled eggs.

You can do it with any radish pods if you let them blossom and go to seed, but rat-tails have especially long pods so they make for great pickles. I put them on salads.
