Pretty similar to the way you make yours with the addition of Feta cheese and deep fried. She used the Turkish equivalent of Greek tzatziki (A garlicky English cucumber and Greek type yogurt sauce).

I've been trying to avoid fried foods, but I'm going to try my hand at the zucchini pancakes thing.

I hear you can bake them in a pan like brownies if you add additional olive oil to the pancake mixture. But it doesn't sound as appetizing that way. Healthy...... but possibly pretty bland.

Why does everything that's bad for you taste so damn good?

from the remnants of Sunday dinner of roast. I'm cooking it at 350, it has roast, carrots, broccoli and cauliflower along with corn and some peas. I spread the mashed potatoes on top, doused it liberally with grated cheese, and stuck it in the oven.

I don't know how long I'm supposed to cook it for, though.

Oh, and I added beef stock to the bottom layer.

there's a batch of tuna salad in the fridge, so it may be that and some crackers. it could be a warm salami sandwich. and if i'm really feeling it, i'll make some pasta with veggies.

of course, there's always the chance it'll just be a bowl of cereal.

it's usually 11 by the time i get home and i'm far too wiped out to cook. i'll put together a batch of tuna or pasta salad, but it's primarily to feed my husband rather than myself. i do most of my cooking on the weekend, the week is cereal or simple sandwich.

Split Pea Patties

1 lb pkg split peas
water to cover
a little bit of butter
spices - (I like sage and they are good with curry powder)
salt and pepper to taste
bread crumbs or wheat germ or cornmeal, or whatever you like for coating

Sort and rinse the split peas. Place in a large saucepan and cover the peas with cold water maybe 1" of water deep over the level of the peas. Bring to a boil, reduce and simmer until peas are soft enough to mash. Should take 25 minutes or so. You don't want a mush.

Drain and then mash the peas, adding the butter, spices and salt and pepper. Form into patties and coat with your choice of coating.

I sauté them in a cast iron skillet with a little butter. Sometimes I caramelize some onions to top them with.

Using light Italian herb flatbread as the "vessel". Topped with black beans, chopped roast chicken breast, Chipotle peppers in Adobo sauce (La Costeña canned), and 1/2 ea. shredded mild cheddar and Mozzarella.

And, of course, topped with sour cream and plenty of cilantro.

Got some big, fat beautiful chicken thighs from the whole paycheck. Making extra so I can use it later in the week.

Just moved into a new harbor - calm, quiet and beautiful. Hope to not move again for a week or so.

Ribs, pizza and some fresh corn. I am having crab cakes with some veggie coleslaw. Maddie and I will probably have a mixed berry smoothie for dessert.
