love chili and cornbread. it's perfect chili weather here (90s over the weekend, mid 60s since monday), so i might put up a batch tomorrow.

(146,218 posts)I've got pretty much everything I need - chicken thighs, green pepper, onion, garlic, jalpeno, can of tomatoes, can of pintos and spices.
And of course, sour cream, scallions and cheddar cheese. I would love some fritos, but that might be going overboard with the cornbread and all.

(24,146 posts)mine usually includes roasted bell peppers (i don't like green ones) and a can of corn. can each of crushed and roasted diced toms, pinch of brown sugar, locally blended spice mix and some cinnamon, pintos and kidneys, sometimes white beans. corn bread is usually made with creamed corn and diced jalapenos.

I like to make it in the cast iron skillet, preferable after cooking some bacon in there.
I'm drooling just thinking about it.

(6,057 posts)I had two peaches at maximum ripeness and thawed chicken breasts and I found this recipe this morning in Miss Vickie's Big Book of Pressure Cooker Recipes. A lucky find. We'll see if it's any good.
