I have a terrific fall menu lined up for tonight:

--hot spiced apple cider
--orzo with greens, feta, and cranberries
--tortellini soup or broccoli-cheese soup, haven't decided which yet. Have ingredients for both.



On another note, the other night I made my vegetable lasagna. I had some trouble getting it made (time constraints, work). I persisted, however, and it did get it made except one small issue: I was so tired I fell asleep in my computer chair right after I made it! And it baked on the convection roast setting for an hour too long!

Pleasant surprise, however! It had a deep, rich tomato taste. It tasted like I made it with sundried tomatoes!

Quite delicious. Here's a pic of the eggplant after I grilled it for the lasagna:

Also a simple arugula salad and a baked potato. Don't feel like putting a lot of effort in it but I did want something spicy.
