Cranberry Upside-Down Cake

This looks like it would be really easy to make. I might just give it a shot.




8 tablespoons unsalted butter, room temperature
1 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon allspice
1 3/4 cups cranberries
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk



Step 1
Preheat oven to 350 degrees with rack in center. Rub the bottom and sides of an 8-inch round cake pan with 2 tablespoons butter. In a small bowl, whisk together 1/2 cup sugar with the cinnamon and allspice. Sprinkle mixture evenly over bottom of pan; arrange cranberries in a single layer on top.

Step 2
With an electric mixer, cream remaining 6 tablespoons butter and 1/2 cup sugar until light and fluffy. Add egg and vanilla; beat until well combined. In another bowl, whisk together flour, baking powder, and salt. With mixer on low speed, add flour mixture to butter mixture in three batches, alternating with the milk, until well combined.

Step 3
Spoon batter over cranberries in pan, and smooth top. Place pan on a baking sheet; bake cake until a toothpick inserted in the center comes out clean, 30 to 35 minutes. Let cool on a wire rack for 20 minutes. Run a knife around edge of cake; invert onto a rimmed platter.

pls let me know if that was enough sugar....

I make a cranberry bread for the holidays, and usually cut down my sugar when I bake,
but found I need more than I thought for cranberries.

I was curious about the amount of sugar too, but in the first part of the recipe it says you can top it with whipped cream. I thought maybe topping it with whipped cream might just counteract that tartness that the cranberries have. Anyway, I'll let you know how it turns out.

upside-down cake here, and I think this would be a big hit with my family.

When I make cranberry-orange relish, the ratio is usually one bag of cranberries, one orange and one cup of sugar, so your recipe sounds about right to me. I'm clipping this one for future reference. Thanks for sharing.

It is a really delicious cake and makes a beautiful addition to a holiday table. The version I made used a glaze of 1/4 cup melted red currant jelly over the top. It has an almost gem like look. I took it to work one Christmas season and it was very well received.
