I LOVE slow cooked lamb. Do you have a recipe? And what size slow cooker does it use since I'm having to replace mine and want to get one that is flexible enough to make things like lamb roast in it.

I just added the lamb, some chopped onions, sliced mushrooms, garlic-lots and a couple jalapenos. A little soy sauce and some paprika finished it off.

It's getting cold, I need a new crock pot, and I want something new to cook in it . I love lamb. I'll put it over rice, if that helps.

Great Haas avocado crop this year. On sale in the store and friends have more than they can use, so there's a lot of sharing and trading going on.

i love avocado, i will just eat it with a spoon. but the quality and ripeness is really hit and miss here, but i'm a ways off from avocado territory.

dropped my ballot off today, was very pleased and surprised that they had one at the grocery store.

When they're abundant (crops are really variable) I slather them mashed on toasted bagels for breakfast. Serve as a side or a snack.

An unusual aspect of avo production is that growers essentially have two crops on the trees at the same time. So they pick as the market fluctuates or when the earlier crop ripens and has to go to market.

Haas doesn't ship well, has a shorter shelf life so it tends to be more available locally.

Ingredients

EGGPLANT
2 medium sized eggplants sliced into 1/2 inch rounds
kosher salt
4-5 cups bread crumbs
1 cup parmesan cheese
1 cup flour
5 eggs, beaten
olive oil

SAUCE
3 14 oz. cans crushed tomatoes
olive oil
1/2 c red wine
1/2 medium size onion, chopped
4 garlic cloves, minced\1 T oregano
1 t black pepper

12 oz mozzarella cheese, grated
1/2. parmesan cheese, grated

Directions
Okay, I admit it, the directions are long and time consuming, but in the end, it's well worth it. Slice the eggplant, toss with a liberal (as opposed to conservative) amount of salt in a colander and let drain in the sink for 45 minutes. Make sauce: In a medium sized pot, sauté onion in olive oil until translucent. Add garlic and cook for a minute or two. Then add tomatoes, pepper and oregano and simmer for about 10 minutes until sauce thickens slightly. Turn off heat and let cool.

Wipe salt off eggplant slices and place on paper towels to dry. Then put half the slices in a large plastic bag with flour and shake to coat them. Remove and repeat with remaining slices. Combine bread crumbs with a cup of parmesan cheese on a plate. Coat two cookie sheets with olive oil. Dip the eggplant slices in the beaten eggs, dredge in the bread crumbs and place on the cookie sheets. Bake in the oven for 30 minutes at 425° for 30 minutes. Flip slices after 20 minutes.

Assemblage
In a 9x13 baking pan, pour about a cup of the tomato sauce. Then place a layer of eggplant. Cover with a cup or two of sauce and top with a generous amount of mozzarella. Add remaining eggplant. Then dot each slice with a spoonful of sauce and cover with mozzarella and parmesan cheese. Bake for 20 minutes until cheese is bubbly and nicely browned. Let cool for 10 minutes before serving.

which is a fancy way of saying I scored some clearanced jars of Pataks vindaloo sauce for $1.50 each on the way home tonight, an eggplant from the garden, and didn't have time to cook from scratch because of voting.

from Trader Joe's. Still trying to come up with a sauce for it. I'll probably make a sherry-cream sauce, with shallots and mushrooms. Maybe throw in that leftover tomato, too.

I'm always leery about making sauces that are too strong when the ravioli filling is subtle.

I made a rub of brown sugar, cumin, paprika, coriander, salt and pepper. Rolled the loins in the rub, then seared it. Placed them in a roasting dish and in the oven for about an hour.

i do something similar with pork chops, i toss a can of pineapple in there too.

to eat twice . I think next time I'll cut back on the vegetable stock. It was a tad too runny, but it ended up pretty good over rice, if a bit too sweet. All in all, it wasn't my best effort and needs some tweaks but was far from inedible . Hope your tooth feels better. Heaven knows there are three areas of the body that are irritating to have work done on - the feet, the teeth and the eyes. LOL.

wound up going with pre-made butternut squash soup. added some dried chipotle and it was really tasty.

i've never had work on my feet or my eyes and i hope to keep it that way.
