I just started a sponge for a loaf I'll make tomorrow. King Arthur flour make the best bread. Anyone have some favorite flours?

I have been told that Trader Joe's flour is King Arthur in a different sack.

(110,900 posts)1. King Arthur white flour and I paid through the nose for it in NM.
Whole wheat is best if used the day it's ground, there really is a big difference in flavor that first day. I was spoiled by a store with a stone grinder on premises.
If I could still eat wheat, my Kitchen Aid would be fitted with their grinder.

I don't know if this is true, but I certainly get good bread from it.

(11,339 posts)3. I agree with you about the King Arthur.
When I can't find that, I use Bob's Red Mill. I also use the Bob's for things nobody else seems to sell, like gluten flour, and whole grain rye.

Really depends on the type of loaf I want to make.

For feeding my starter culture I use whatever is cheapest.
