The kind of chocolate has to matter a great deal.

Got some good chocolate covered mangos at CostCo but I'm going to try to do some apricots and myself. I think I will temper the chocolate though online it says you do not have to temper really good dark chocolate.

It looks like it would make a nice holiday gift. Trader Joe's excellent chocolate bars should work just fine.

dark chocolate and ginger.

However, I really prefer preserved ginger over candied. Oddly, it's not as common to see preserved used with chocolate, so I wonder if it's an issue of shelf life.

Either way, that bark looks REALLY good and I may just have to make some.

How was your Thanksgiving??

visited my daughter at her new house, expecting a baby any week now. Yours?

How's the weather up there???

The more I think of the dark chocolate w something bark, the larger my craving becomes. The only good thing is I haven't seen any easily available (recently.) Thank goodness!
