sounds intriguing. What else is in it? I tried googling a recipe, but not much luck in finding a good-sounding one.

Roasted Lima Bean, Garlic, Green Olive Casserole

3 T. extra virgin olive oil
1 lb. bag frozen baby lima beans
6 large cloves garlic, peeled and halved
1 c. green olives, sliced
Salt and Pepper to taste
1 t. dried marjoram, thyme or sage

Preheat oven to 375 F.

Drizzle 2 T. olive oil over bottom of gratin or casserole dish. Add all other ingredients and toss.

Tightly cover the casserole dish with aluminum foil and bake for 50 minutes. Drizzle the remaining olive oil over the top, if desired.

I'm going to do a fridge clean out today and probably tomorrow. The crew ate most of their provisions but left a few things that need attention (or to get tossed).

I picked up a rotisserie chicken at a corner store that sells roasted meats of all kinds. It looks and smells delicious and they cut it up for you with huge kitchen shears.

Also found the asparagus man, who is selling asparagus from his small fold out table on a corner. Looks really good - think like a prefer them. Thinking about making a hollandaise sauce.

I've got some apples and a pineapples that is getting moldy on the bottom and some yogurt, so maybe a fruit salad for desert.

So glad to be back home and able to talk with all of you again.

Regarding the refrig clean out, I always enjoy them. It's a challenge to one's creativity.

Happy you're back!

I'm making stuffed....stuff! I have some pork sausage and lots of giant mushrooms. Some acorn squash, too. So I plan on making a very spicy stuffing and then roasting them. Stuffed mushrooms and stuffed acorn squash.

There should be lots left over for snacks and light meals for a day or two.

I had a great trip, as did my husband and his crew. Everyone has headed back to their respected homes and we are sitting in a beautiful marina.

Your dinner sounds great. I love stuffed stuff, especially potatoes when I'm doing a fridge clean out.

La Paz is really nice, but a little large for my tastes. It will be fun to explore, though.

After mentioning it yesterday, I just had to make it. Deglazing the pot with red wine after browing the beef really made for a rich broth.

Added slivered bell pepper, onion, carrot, peanuts. Sesame oil, hot. Tossed all and added hoisin sauce at the finish.

but frankly, they came out pretty bad. They tasted very gamey. I baked them in the oven. The longer they sat in the oven, the more edible they became, but they still just didn't taste very good.

I don't know what I did wrong with them, since I've made them before on the grill and they were great. Not good in the oven, though. Might have just been a bad cut of meat. I got them on sale, and I don't think it was really lamb, more like "mutton that is on social security" or at least "has a job and three lambs", even though it was labeled as "lamb".

Very fatty, too on the edges. The fat had an incredibly gamey taste. I didn't see a cane in the packaging, but I'm pretty sure that the "lamb" in question needed one to get where it was going.

cooled long and slow in the crockpot . After smoking the bone in ham for a few hours to get a perfect smoke ring we added that bone and all and let it slow cook in the crockpot for 24 hours. Very good.

Mix a little hoisin sauce with the ground beef.
Splash some teriyaki into sauteed onions.
