ran into some financial difficulties, so i couldn't afford a test run on it, but i'm honestly not all that concerned about it. it's been in the brine for a couple of days, 2.5 pounds of brisket for corned beef, 2.5 pounds for pastrami. i need to get the sauerkraut going tonight or tomorrow. i'm going to test the smoker out with a tri tip i've got in the freezer and do the test run on the rye bread this weekend.
i'm really excited to be doing this for my dad. he's really hard to surprise, but i think this is going to do it.
