Wild rice with caramelized onions

Ingredients
1 c wild rice
3 cups water
1 small white onion
olive oil

Directions
In a small pan, bring water to a boil. reduce to a simmer and add rice. Cover, reduce heat to low and cook for 40 mites, stirring occasionally. Cook until all the water is absorbed. While rice is cooking, sauté onions in a bit of olive oil until nicely browned. When rice is done, mix in onions, season with salt and pepper to taste and serve.

of salt. Not all of the water will be absorbed so it needs to be strained. I would actually use chicken stock and sautee some small dice of carrots and celery and add sautéd mushrooms as well.

Minus the salt. I don't use salt when I cook. Sometimes I add it when I'm eating.
