(146,218 posts)I rolled it up in flour tortillas, put shredded cheese on top, baked and served with creme.
For such a simple recipe, this stuff is extraordinary.
I highly recommend it any time you have leftover chicken or a rotisserie chicken.
Are you going to do something fun for your vacation??

It may also be because I had some of the best chicken I have ever had.
The chicken down here was generally killed that morning. They are big and have none of those stringy ligaments, engorged blood vessels or excessive fat. I had forgotten how good chicken could be.
Anyway, it's pretty easy to make. If you try it out, let me know what you think.

I'll be trying out tinga recipe sometime soon. I'll be sure to give you a report on how it turns out.

(2,016 posts)that I need to do something with. They are in a butter sauce. I have a zucchini. So, saute up the zuke with some onion and garlic, toss in the mussels, and serve over linguine. Who knows, maybe I'll add some white wine and a diced tomato too.
(I dunno, I'm making this up as I go along...) I just need to cook the zuke before it goes south.

Do you blanche the bell peppers before stuffing and baking?

(106,886 posts)I blanch the bells before stuffing. Then top with grated cheese for the bake. Everything's basically cooked by then so the bake is just to finish it all off. Use a little bit of water in a small bread loaf pan to bake the peppers in. They sit up well and get some steam from the water.
I like making these, you can go so many ways with the stuffing and spice mix. Italian, Latin American, all veggie (substitute sauteed mushrooms and diced zucchini for the ground beef), etc.

(6,057 posts)That's exactly the way I do it too! In the 8 1/2 x 4 1/2" inch bread pans. They hold two stuffed peppers perfectly.
My basic stuffing is like meatloaf. But I like to extend it with basmati rice cooked in chicken broth and chopped celery, and mixed with some Sriracha/ketchup mix and some shredded cheese (mozzarella or cheddar).
And topped with some sriracha/ketchup and shredded cheese.

(106,886 posts)"Seeds of Change" - Brown rice, rye, barley, bulgar, millet, quinoa, wild rice. Browned all in the skillet, then added the leftover pintos, diced tomatoes and a couple of tablespoons of the bell pepper water. Simmered till the water was absorbed or cooked off.
Skipped the tomato paste / sauce entirely. Used a bunch of grated sharp cheddar for the bake. Everything held together well and the peppers were just done, no more than that.
Love when it works on the fly. I'm calling this Bell Peppers Rustica.
And one was enough, there's another for tomorrow.

(175,731 posts)I'm having the short ribs in gravy with carrots and shallots. Temperature is falling down to single digits so hot food is the order of the day.

I'm going to slow cook them in the oven with a BBQ type sauce, but I have no idea what to expect.

I lived in Chicago during the era of mini-skirts and had about a 1 mile walk to school. I will never forget it and will never, ever experience that again.

(9,494 posts)Roasted butternut squash, baked granny smith apples and sweet vidalia onions and spring water. Blend until smooth, season with fresh sage and garnish with chopped pecans. With a great big salad.

At the end, when you add the chicken, you also add 1 ½ cups of chicken broth.
Then you cook for 10 minutes or so to reduce.
Let me know if you give it a try.
BTW, I liked her website so much, I bought her cookbook.
