A simple salad with what I have on hand (not much) and probably a can of something vegetable-like.

Decided to put off market until tomorrow to make sure we eat up everything we have.

not much else in the cupboards. husband gets his first paycheck in two months tomorrow and i might actually be able to stock up again.

onions, peppers, red beans in some kind of sauce. Maybe cheese on top. Tomatoes on the side and a serving of braised cabbage that needs to be ushered out of the refrigerator.

Whenever I have small quantities of stuff left over from Sunday dinner, I freeze it in little containers and then take it out as needed to make a single dinner. If there is someone else eating with me, I can extend it with beans, rice, or another vegetable. Sometimes, I put it into soups, stews for added flavor. My SIL gave me a set of freezer containers which will really come in handy for these ad hoc dinners.

...deep dish cobbler with a graham flour topping. (Out of AP flour). It's delicious. I may just skip the stroganoff and have a bowl of the cobbler.

Thank you, farmers market vendors, for these wonderful berries from summer.

Only five months til the market opens again!

Pork tenderloin w/jerk sauce, and a salad w/grilled corn and avocado, and lime dressing.

I thought it was great but the kids thought it was way too spicy. I gave them plain yogurt to dip the meat into to cool it off but they still hated it. Well, my 16 year old liked it but still thought it was a bit spicy. Next time I won't put so many chilies in the sauce - the last batch of chilies I had were so mild I didn't even think this new batch would be so spicy. Oh well.
