with a crusty bagette. I think I ate my quota of meat this weekend, so I'm going veggie for a while.

Just asking because I recently watched an episode of 'America's Test Kitchen' and they made a delicious looking version of minestrone using parmagiano rind.

I used the rind of pecorino romano. Either one makes for a great tasting soup!
And, it's a great way to use the last bits of your hard cheese.

Turned out pretty good...... but not excellent.

I have some ideas to improve on it next time.

They soaked up all the broth and were kind of mushy. It was still pretty good but can be improved.

Mixed veggies would have worked out better.

The potatoes are boiling now. I am a novice, so I have to add an egg to the mix to get the ingredients to bind.

10. Roasting a chicken, along with vegetables

Even though it's a "fryer." I don't want to cut it up. Too much other work to get back to.

And then I am going to put vegetables with it. I have boiler onions, but I'm going to roast them instead. The usual carrots and celery, too.

I have some beautiful fresh broccoli for a side dish and I intend to try Pinto's trick of the dollop of mayo with curry added to it.

Wish I had potatoes to add to the roasted chicken. Would be nice on this snowy day. But I don't. So I might go with some frozen french fries.

but not mine from saturday night.

stopped over at a buddy's on the way home from work tonight and he offered me some of his. i think it was better than mine.
