Also found the best market for produce and staples - jamaica flowers for flavored water, coffee, beans, rice, cheese, ham and beautiful produce.
A bottle of wine from Chile, limes for margaritas.
I'm set for days!

(146,218 posts)What do you recook them in? Most of the recipes down here call for lard or bacon grease, which I love, but don't want to over it.

(22,123 posts)alter it too much. Sometimes I sauté onions and green bell peppers first and add the beans.

I like them pureed and if I have some chicken broth, I thin them with that.
No salt until the end.
And sometimes some cilantro.

(9,808 posts)branches to break and falling on power lines. If we make it through the next 2 days without losing power, we will be fortunate indeed. I think I am north of the ice line, with snow in the forecast for tonight and tomorrow. There was a horrible wreck just up the road this morning with one fatality.
My house is totally electric, though I do have a propane heater for back up, and fortunately it is not supposed to go much below freezing. Today, I made a pot of pinto beans and sauteed peppers and onions. Right now, I'm making refritos and I think if the power goes out, I might be able to warm the tortilla-wrapped beans if I wrap in foil and put them in front of my propane heater. I think I will invest in a propane grill before next winter. My husband and I weathered many a storm by cooking on our gas grill during blizzards in NC mountains. He even made coffee on the grill!
So tonight I will be having refritos with corn tortillas, peppers & onions and an avocado/grapefruit salad.
Edit to add: I use refined coconut oil to refry the pintos, and bean juice to keep them moistened.

(146,218 posts)Hope you survive the weather. I cook on a propane stove (and oven). It's cheap and reliable and if done correctly can be used indoors. Plus you can put an ecofan on it for heating.
Your dinner sounds great! Keep each other warm.

(9,808 posts)cattle herders)cooked and then reheated beans over and over again until they became refritos. What was a dreaded meal (the last of the pot of pintos) has become a favored dish in modern times.

Dinner is pork roast stew. I made corn bread--but from a mix (Trader Joe's mix--the best!).
Dessert: stewed plums with yogurt on top and sprinkled with chopped crystallized ginger.

(10,170 posts)Had some leftover potato soup in the fridge. I took a little of that and some power greens and broccoli sprouts which I pureed together in the blender. I heated up the majority of the leftover soup in on the stove with some parsley and dill and cayenne and paprika. Just before it was hot, I stirred in the reserved pureed green mix.
Tasty and quick!

(28,442 posts)Broke out the last of the turkeys we bought and froze around T'giving on Sunday, cooked it, now have the usual mounds of leftovers. Had some lime-cilantro pasta I needed to use (weirdo specialty pasta in weirdo specialty packaging taking up too much room in the pantry). So I took:
1 can of cream of mushroom soup
1 can artichoke hearts
1 cup turkey stock (cooked from the bird Sunday night)
some mushrooms needed to use in the fridge
a bunch of turkey
a teaspoon or two of cilantro
a couple tablespoons of lime juice
salt & pepper to taste
Basically cooked it all together until the turkey warmed back up and the mushrooms smooshed down a bit like they do. Super, super yummy, especially with the specialty pasta.
