We are expecting snow today, so we are thinking one pot comfort food meals for the next few days.
I've been back on soft foods recently, but the pain seems better this morning, so hopefully I'll have stew tonight!
Hope you are all happy and well!
And thankie very much for the hearts! ♥

(2,016 posts)I've got some leftover turkey, so I'm gonna make a stock from the bones and the reserved drippings.
Then make a classic turkey noodle soup. I figure I can get one supper and 2 lunches out of this batch.

...... I think it's Moroccan Spiced Chicken stew.
The shrimp will have to wait until later. The freezer is not going to empty itself of my unmarked frozen "mystery meals" by itself.

(146,218 posts)Plan to puree and refry with bacon. Also some green rice with pureed poblanos, I think. I have fresh tortillas and some leftover chicken.
Should be a feast!
Hope you are feeling better as the day progresses.

(8,646 posts)It's some kind of quinoa salad that has a lot of herbs in it along with roasted peppers, avocado, mango, sprouts and spinach...all with blackened chicken.

(106,886 posts)Save for the sprouts. My New England friends, when they heard I was moving to CA, said "Ah, you'll be eating sprouts in 2 weeks."
LOL. Haven't yet. Don't care for them much to tell the truth.

(8,646 posts)The name of the recipe is actually 'San Fran Quinoa salad'.
I've loved sprouts since I was a kid...I had a friend whose mother was all hippie and always fed us healthy stuff (ie whole wheat bread when everyone else was eating wonder bread) and I've always loved her sprout sandwiches. I'm on the Canadian prairies so it's not like sprouts were common then...they are more so now. I've even grown my own...all kinds too, radish, clover, bean, wheat etc.
The recipe actually calls for watercress sprouts, but it's not easy to find any watercress where I am so alfalfa it is!

(146,218 posts)There are a few foods I miss and fried chicken is one. They make it, but its just not the same.
And the hamburgers here are weird. I haven't yet figure it out, but the ground meat is really unappetizing.
OTOH, you can find good pizza.
God figure.
Enjoy. Sounds like a great meal.

(175,729 posts)Going to use cornstarch and egg to get a crust, then some oil and finish in the oven. The fries are frozen ones from Trader Joe's. Hope the chicken turns out okay, never made it this way before.

(146,218 posts)IIRC, that's one of your favorites as well.

(106,886 posts)Probably works fine either way. Have a good one.
Love fried chicken, fish 'n chips, etc. but I seldom fry at home. A really small house, the fry haze takes days to move on. I pan sauteed fish the other day. Two days later my neighbor stopped by and said, your fish fry today smells pretty good...

OTOH, I discovered the fish market today where I can get excellent fish to eat raw!
Looking forward to spending enough time here to get to know some of the fisherman and discover what I can serve as sushi.
