What's for Dinner ~ Friday ~ Feb 14th ~ VDay Edition

I know i'm early, but I never know when I am going to feel up to posting these days!

Bill is working on a big graphics project, and I alternate between staying in bed, and setting up a work space so I can start painting again, so we are keeping meals simple. We never made the beef stew the other day, so it will probably make an appearance for Valentines day. Not too romantic, but yummy!

Took the last of the ribeyes I cut off the rib roast last month out of the freezer.

I've been cooking all week cause we've been snowed in and it's just me and the pups tonight...so pizza and the Olympics. So looking forward to a break!!

It is fish that we can eat raw.

I went to the market and bought lots of fresh fruits and vegetables, so it will be a raw night.

And margaritas, of course!

I will probably have corn, potatoes of some sort, green beans, and artisan bread. Oh, and I am going to give chocolate covered strawberries a whirl.

Baking a chimichanga doesn't fit the Tex-Mex tradition but I'll brush with oil and finish them under the broiler to get some crust.

Typical sides - rice, avocado, sliced fruit. May shoot for some toasted cinnamon / brown sugar tortilla triangles to go with the fruit.

by the weather. Wah! We were going to my favorite Japanese buffet but now, no. The RG couldn't even get back to NJ so he went direct to Chicago.

So I had more tortellinis with this tomato sauce I made. Best tomato sauce I've ever made!

I'm hoping Valentine's Day dinner is just a postponement.

Lucinda, your painting space sounds like a satisfying and creative endeavor. Life is so much better with a creative outlet.

one salad was shredded carrot w/chives, lemon juice and olive oil, the other was 'regular' salad because I knew my kids would hate the carrot one, LOL.
