What's for Dinner? ~ Saturday January 14th!

Going to move back to the daily post. It's easier for me to read and respond when I feel icky.

I didn't feel well last night so I just nibbled, but I am planning to cook and eat tonight.

I think I'll be doing a Rosemary Roast Chicken w/ Veggies. I like to do a mix of what is in the house in the roasting pan under the chicken, so today with be sweet potato, potato, carrots, celery and onion. I slice them and toss with olive oil and then season with garlic, black pepper and sea salt. LOVE roasted veggies.

And I cooked some turkey croquettes out of the freezer that I made Thanksgiving weekend.

Those may be lunch and dinner tonight just to use it up.

My daughter used to love the frozen Weaver brand when
she was little (she's 18 now). We tried some awhile back
and I think it's safe to say that it's questionable if there
was any chicken/turkey in them at all.

We actually were talking about it last night and looking

Grind cooked turkey in a food processor -- white or dark meat or both, up to you.

Make a white sauce - I melt some butter in a pan, add some flour to make a roux, and cook just until golden -- I don't like it too dark for this application. Then, while stirring, add milk until you end up with a medium-thick white sauce. I'm guessing something like 4 tablespoons of butter, about an equal amount of flour is enough for 2 cups of milk.

When I made this batch, I did something different -- I added a couple of whole eggs to the white sauce while stirring vigorously - just to see what it did, and it made a thicker, richer white sauce, although I really can't see any difference in the finished product.

OK, then you need to combine enough ground turkey with the white sauce to make a mixture that will form into a stiff patty or ball and keep its shape. I also add in any desired seasonings at this stage -- usually pepper and some dried onion, but you can add various seasoning such as Italian if you like.

Make patties or meatballs of whatever size and shape you want, and then dip in beaten egg and roll into breadcrumbs. I find it helps make them easier to work with if you put the patties in the fridge for an hour to firm up before you bread them.

Cooking is simple, just brown on low-medium heat in a little oil or butter in a skillet, or just with cooking spray in a non-stick pan. They take about 15 minutes to cook for a typcial "hamburger sized" and thickness patty, and I flip them a couple of times on each side.

One thing I like to do with these is to use them to make Parmesan - after I fry them, I transfer into a baking dish, pour some marinara sauce over them, and top with various cheeses, then bake for about 30-45 minutes to heat through and melt everything.

I didn't think that just eggs would be enough to do it. I'll have to try them. My daughter and hubby pretty much like anything, but my son is a picky eater. I think he'd like these (and they'd be better for him than anything in a box).

I ended up not feeling well enough to cook and i'm finally getting an appetite, if it weren't so late now, I'm make biscuits and gravy!

we called them cabbage rolls growing up.

Meat, onion and cabbage inside a roll. We've created a few different fillings over the years, but the cabbage is still the fav.
I'll make an extra batch today with scrambled eggs, cheddar cheese and sausage or bacon. They keep for days, and are even good cold. We may have an ice storm coming in tomorrow, so I wanna make sure we have something to eat that we don't have to heat up, just in case.

(and yet I am wasting precious time trolling around DU b/c I have no self-dicipline ), so my latest ready-in-minutes dinner will be served:

Trader Joes' spinach & chive pasta with TJ's Artichoke Antipasto (a tapenade, really) tossed with it over it while the pasta is piping hot. A few generous gratings of Grana and off to the table! Salad alongside.

still looking for a easy and quick recipe that doesn't involve Lipton Onion Soup or Cream of Onion soup. Probably will just add garlic, salt, pepper and onion slices with a glug of red wine. Going to do roasted vegs and side salad for me.

and get chucked into the crockpot until it was falling apart. Then it would end up as enchiladas, beef dip sandwiches, or BBQ.

put slits in it and stuffed with minced garlic, sprayed with olive oil then salt and peppered. Put in oven @500 for 20 minutes then turned down the heat to 350 and cooked for another hour. Made some gravy and sliced it super thin. It was delicious.

and it finally burned out. It was great for taking cooked roasts and making thin thin slices. I miss it.

We were out a little late and when we got home my wife passed out without dinner - not like her, mind you. I can go without food from noon until late morning, but she's more active and needs a lot more food. She got a promotion yesterday and we went out to celebrate - mostly beer. The wine and cheese is going to happen tonight. She's out talking and laughing with the kids right now but she'll be hungry (and ready for a video) in about half an hour. We've spent over half of our lives together - I know her pretty well.

Sauteed onions and tomatoes in the juice with red wine. Added shredded mozzarella (well, diced mozzarella snack sticks...), some bread crumbs and a little commercial sauce. Stirred and simmered while I boiled the pasta and toasted some garlic bread.

Came out pretty good.

Slushy rain coming, and I'm feeling lazy and chilled. So many birds were on the lawn today, eating berries and seeds that will be inaccessible for a few days of cold. Brrrr. And yet three intrepid fishermen huddled in a boat on the river, trying to get a salmon to join them for dinner.

Omelets with feta and fresh spinach. Sweet potato home fries. Sausages. And chunky cinnamon-y homemade applesauce from summer apples.

I used the recipe from MarthaStewart.com. Aldi had cauliflower for 99 cents a head. I bought two nice, big ones, and roasted them last night. I had some of it on it's own for dinner. The rest went into soup. I'll be having it for lunch or dinner for the next several days, which is fine. It's one of my favorite soups.

had dinner with my dad and sister tonight and it's one of our standard dinners since i was little. we had a mix of broccoli and cauliflower with a bit of butter and salt. i had almost a whole breast and two servings of veggies, i was hungry tonight

rather than steaming, that way I only have one pan to clean, plus they are yummy too.

I'd make more broccoli and cauliflower, but the foolish man I live with isn't a fan. I love the stuff.

I bought some tempeh from trader joe's last week, with absolutely no clue how I would be using it.
I haven't bought tempeh in years, and I think the last time I cooked it, it was less than successful.
I finally decided on fajitas, thinking that if the boys don't like it, they could always cover it with a bunch of cheese.
They loved it.
