Chicken with leeks, mushrooms, and roasted red peppers.

Ingredients
6-8 boneless chicken thighs
2 leeks, chopped
2 cloves garlic
2 c sliced mushrooms
2 c dry white wine
2 c chicken broth
1-2 roasted red peppers, chopped'
1 T corn starch
black pepper to taste
3 sprigs rosemary

Directions
Lightly pepper the chicken thighs and brown them in olive oil in a frying pan. Remove. Then, in the same pan, sauté the leeks, garlic and mushrooms until soft--about 10 minutes. Add the chicken thighs, red peppers, rosemary, wine, and broth. Cover and simmer for 1/2 hour to 45 minutes. Just before serving, dissolve the corn starch in 1/2 cup water and slowly add to the chicken while whisking. When the sauce thickens, serve with mashed potatoes or noodles.
