My current Pasta obsession....

OMG Here's a quick and easy Pasta concoction

Pan fry a strip or two of bacon in a non stick pan. When done, remove all but a hint of the grease and lightly saute up a small onion and crushed garlic and some crushed red pepper to taste. S & P of course...when soft and translucent
Add a small can of tomatoes and the crumbled bacon.

When hot and bubbly crack four eggs into the pan and gently poach. Top with grated parm....and serve over pasta or just eat it with bread.

I use a non stick pan and it just slides out with the eggs still intact on top of the pasta.

Guess what I'm having for dinner.....With shiritaki noodles for me!

I use a small cast iron skillet which I pop under the pre-heated broiler in the oven to finish the tops of the eggs when they are almost done .....but the whites still a bit wiggly. I sprinkle the tops with Parmesan before popping in the oven under the broiler.

My favorite platform is Texas toast (that I've toasted under the broiler before the eggs go in). It's great on pasta too (left-over or freshly cooked).

Yes, this is a bit lighter and without all the cheese...and of course with tomatoes....Plus you get the thrill of popping a whole poached a whole poached egg in your mouth and have it explode all over your face!
