1 chicken breast, pounded out
1 small can jalapeños
1 large onion, chopped
3 cans (15 oz.) cannellini beans
2 T cumin
1 t coriander
1 large box/can reduced sodium chicken broth
2 c water
Garnish
Green onion, minced
Sharp cheddar cheese, shredded
Corn chips, crushed
Directions
Sauté the chicken breasts in a bit of olive oil until cooked through. Let rest for 10 minutes and chop finely. In a large pot, sauté onions in olive oil over medium heat until translucent, about 15 minutes. Add the chickhen and the rest of the ingredients and simmer for 1 hour. With a potato masher, mash the soup and cook for an additional hour. Serve hot and top with the garnishes.

Instead of jalapenos I use diced green chiles. No coriander, but minced garlic,cayenne and red pepper flakes. Also a little salt and lots of black pepper. It's easy and doesn't have to cook all day. Yum!
