I can't eat it, but I seem to make a lot of it! Plain fudge, walnut fudge, peanut fudge, and PECAN fudge!
Recipe from my 1954 Better Homes and Gardens cookbook
2/3cup whole milk
5tbs cocoa powder
1tbs corn syrup
2 cups sugar ( white or brown)
2tbs butter
1tsp vanilla extract
1cup chopped nuts (opitional, type of your choice)
First 3 items, combine and heat till smooth
Add sugar and cook to softball (235deg)
Remove from heat and stir in butter
Allow to sit till pan is lukewarm
Stirr in vanilla and beat till no longer glossy looking
Stir in nuts
Pour into a buttered dish and allow to cool completly before cutting.
ENJOY!!!

(37,549 posts)3 cups of choc chips. (18 oz, about a bag and half.)
1 can of sweetened condensed milk.
Healthy pinch of salt.
2 teaspoons vanilla extract.
In microwave, or over double boiler, melt chips and milk together, stirring. Add in the salt midway. When melted, take off heat and stir in vanilla.
Spread in an 8x8 or 9x9 pan that has been lightly sprayed. Chill for 2 hrs.
That's it. You can add nuts, throw a layer of peanut butter fudge on top of this, etc....very creamy and kid friendly.
For xmas, you can spread the fudge, throw a bag of white chocolate chips on the top, wait five minutes, then sprinkle crushed candy canes on top. With an offset spatula, mix and spread the white chips and candy canes.....then you have peppermint bark that was amazingly easy.
edited to add--this is the recipe on the can of eagle brand, I think.

My aunt used to always make really good fudge every year at Christmas. She always made chocolate, both plain and with nuts, as well as peanut butter and a "blond", kind of butterscotch type fudge. It was very good, made the traditional method. Due to age, she no longer does this.
I tried making the "idiot fudge" a couple years ago. While not quite as good as the hard to make traditional type, it was still really good, and so, so simple and easy to do.

It's not as good as 'cooked sugar' fudge, but it is damn easy and great for kids, office parties, buffets....

Ingredients
1/2 pound Velveeta cheese, sliced
1 cup butter
1 teaspoon pure vanilla extract
1 cup chopped nuts, pecans, walnuts
2 (16-ounce) boxes confectioners' sugar
1/2 cup cocoa powder
Directions
Spray lightly the bottom of a 9 by 2-inch square pan with a nonstick spray.
In a saucepan over medium heat, melt the cheese and butter together, stirring constantly until smooth. Remove from heat and add the vanilla and nuts.
In a large bowl sift together the sugar and cocoa. Pour the cheese mixture into the sugar and cocoa mixture and stir until completely mixed. The candy will be very stiff.
Using your hands, remove candy from bowl and press evenly and firmly into pan. Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove the excess oil. Place pan in refrigerator until candy is firm.
To serve candy, cut into squares.

(8,614 posts)I found that if you hold it at softball for 2-3 min. then it gets smoother. I use a triple reciepe to make a 14x 10 pan. That is what I send to our son in Afgan.
In the Corp while overseas in RVN I learned to make "canteen cup fudge". By using the hot chocolate mix with sugar and creamer, and cooking it over a small piece of burning C-4 a pretty fair fudge can be made. And if you don't cook it long enough you have "spoon fudge".
