2. Souped up tuna casserole.

Actually, canned tuna and canned salmon. Cream of shrimp soup, one can of milk. Chopped frozen spinach. Three kinds of cheeses: lobster cream cheese, brie and white cheddar. Box of shell pasta.

Combined the first six ingredients over medium heat. Layered the casserole: pasta/different cheeses/sauce. Cooked at 400 for about 25 minutes. Made it last night for supper tonight since I don't get home until after 7pm on Mondays. Will take out individual portions and reheat. Plenty of leftovers for lunches during the week!

from our house. They sell a lot of weird products that they get in one-time shipments. A lot of their food comes from places like Whole Foods so it's really high end but very near the end of its shelf-life. I assume the lobster cream cheese came from someplace like that, just as I assume I won't ever see it there again. Sigh.

3. Grilled tri-tip roast

OK, it's a 1/2 roast. With a salad and (here come the fun part)... tater tots!

I had a nostalgic moment as I was waking up this morning - you know that in-between period of not fully awake, and not at all asleep? For some reason, I thought of eating tater tots as a freshman in high school (1979). That was the first time I ever even knew they existed. We didn't have a lot of frozen pre-made foods growing up.

So, I went out this morning to the grocery and bought a bag. Talk about self-suggestive selling, huh?

7. Spaghetti and meatballs

I made roasted tomatoes yesterday, so I used sauce I'd made from the roasted tomatoes and also served a couple whole for on top of the pasta. Topped with meatballs (organic grass-fed, no antibiotics) more tomato sauce and parmesan.

.....made with bean sprouts, scallions, diced celery and green bell pepper, a dash of soy sauce and eggs. It has been hard to get bean sprouts here lately because of a great fear of salmonella. But I saw some yesterday, very fresh, and I grabbed them.

Also fried won tons with a pineapple ginger sweet and sour dipping sauce, and some shelled edemame stir fried with garlic and onion.

made Chili. It was good but it just didn't have that little bit of fire/spice and I just can't seem to get it right. What am I missing? Or what can I add ? lol
