1. Scrounge day again.

Class tonight, so the housemate and I will be eating at different times. She just got new carpeting in her bedroom, so I'm out of cash, since I gave the guys who installed it this morning what I had in my wallet as a tip, since they were fast and look to have done a good job.

I think tonight we finally start practicing various sorts of blood draws on each other.

We are leaving for a road trip tomorrow and I want to spray the fridge down and leave it open, so everything must go.

I made some turkey/cheese wraps and am pushing all the various open juices.

Condiments will go to friends and neighbors.

I bought some nice Pacific cod fillets today. I'll either make a cole slaw, or just serve with peas.

Just a simple baked salmon with a light orange juice glaze

and

mashed potatoes with leek, garlic and sauteed kale.....

I also made a batch of orange, cardamom, pistachio cookies. Dough is resting in logs in the fridge so I may bake up a few tonight.

I live alone, so I try to fix things that are one off meals or will easily freeze for future meals.

Recently I did enough cooking and freezing that last week and this week I've had to buy almost no groceries. Nice.

Pork loin roast
1 tsp rosemary, crushed
1 tsp coriander, crushed
1 tsp salt
1 tsp pepper
6 pears, peeled, halved and cored
½ cup molasses
¼ cup balsamic vinegar
3 tbs olive oil

1. Combine coriander, rosemary, salt and pepper in mortar. Rub meat with the mix.

2. Sear meat on all sides in oil.
.
2. Arrange pears around the meatCombine remaining ingredients and pour over the top.

4. Bake at 350o 20-40 minutes until internal temperature is 160o. Baste occasionally with juices.

I used 4 pears and 1/3 cup molasses, as I had a relatively small roast. Served with corn. DH raved and wants it again.
