Dr. Frankhauser seems like an old hippie university professor. On his main page you can find references to many of his experiences. If you click on the cheese page link you get a list of a few dozen of his recipes for cheese and other things. I've been making his recipes for a few years now. Most of them I have modified to fit my own tastes, but they make a great starting point. I have experimented with yogurt making quite a bit, but I've never made anything other than very simple cheese. Someday I might try those out as well.

(6,581 posts)It said to age it 30 days before consuming it. We were too anxious, and cut into it after it had sit 3-4 days in the fridge. It stood no chance of lasting 30 days, it was really good, similar to the fresh farmhouse style Pinconning cheese we used to buy in Pinconning, Michigan on trips years ago. I think we ate it all in 4 or 5 days. It was a fun little experiment, but I haven't done it again.
