Going to make some apple and cheese sandwiches on the delicious fresh rolls they make here (bolillos).

And I think a slaw with sprouts.

Melon with lime/chile syrup for dessert.

We have a little Mexican market down the road which sells bolillos at 5 (sometimes 6) for a buck. I stopped buying sliced bread because they are so yummy!

So I breaded some chicken cutlets with panko and pecans.
Drizzled maple syrup over them.

Mashed pototoes.

Personally I probably would have bought one of those roadside grilled chickens and some already cooked beans and rice, but sounds like you did what you needed to do.
