I'm going to make a turkey pot pie!
Other culinary projects are dandelion tea, Earl Gray tea, and orange-spice tea.
Big tossed salad to munch off of all day long.
And I'm trying to figure out how to make muffins with corn, scallions, and zucchini.

I'm cooking up a red sauce, with boatloads of meatballs and hot Italian sausage, with undetermined pasta (ziti, perhaps).

This is for mini-pies, but I'm making one big pie.
Turkey Pot Pies
Pastry for 4 top and bottom crusts
½ cup milk or cream
2 cups cooked turkey, cut in small pieces
2 tablespoons cornstarch
1/8 teaspoon rosemary
2 tablespoons butter
½ teaspoon celery seed
¼ onion, finely diced ¼ teaspoon salt
1 cup mixed vegetables, blanched
(carrots, peas, onion, parsnips)
Black pepper to taste
Directions:
Line mini pie maker or muffin tins with bottom piecrusts for 4 pies.
Heat butter in a saucepan and sauté onions until translucent. Whisk together milk or cream and cornstarch and pour into saucepan. Add seasonings.
When mixture is bubbling and beginning to thicken, add vegetables and cooked turkey. Simmer until vegetables are fully cooked and sauce is thick.
Divide filling between the 4 crusts. Cover with top crusts and bake in a mini pie maker for 10 to 12 minutes or in an oven preheated to 400 degrees for 15 to 17 minutes or until the crusts are golden.

(21,024 posts)cooked up with garlic, onion & bacon. This is the last of the kale, so it's quite bitter. A little balsamic vinegar helps. I threw in some Bavarian Meats franks at the end. They're a local outfit. Way better than any of the national brands. Finished off with some chili paste and parmesan.

(3,744 posts)Added some chopped garlic, more really good olive oil and lots of lemon. Will probably throw in a baked potato and some french bread to soak up the olive oil in the shrimp!

Yesterday I bought seven pounds of corned beef! It was on sale; couldn't resist. So I cooked it off on Friday. That's a lotta corned beef to put into meal rotation. Yesterday I fixed it straight from the simmer, alongside brussels sprouts and home-fried sweet potatoes.

(8,646 posts)Chicken Korma, Aloo gobi, dal, rice, and roti. Oh, and cucumber & tomato salad with a cumin dressing. The aloo gobi didn't really turn out...oh well.
