Too hot to cook here, too. Fortunately, I tested the A/C 2 weeks ago, after being off for 6 months. Still works OK!

So, looks like veggie lo mein with beef and broccoli in a box.

Tossed ruffled green lettuce, endive, green pepper, roasted vegetables (peppers, onions), celery, and sundried tomatoes. Thousand Island dressing with chow mein noodles on top.

And corn-zucchini fritters with cream and chopped scallions on top.

I recently got my hands on this veggie burger cookbook I've been trying to get for ages.

Here are a couple recipes I looked up for you:

Black Lentil and Oatmeal Burgers

Lentils are known for their high fiber content and they are great in this recipe because they're filling and nutritious.

Servings: 4-6 burgers

Ingredients:
1 1/2 cup uncooked black lentils
1 cup brown rice
1 small onion, finely chopped
1 carrot, peeled and finely grated
2 garlic cloves, minced
1 cup uncooked oatmeal
Salt, pepper
2 tablespoons freshly chopped parsley

Directions:
Pour 5 cups of water into a large pot and bring to a boil. Add a pinch of salt and stir in the rice. Cook for 20 minutes then add the lentils and oatmeal and cook for another 20 minutes. Remove from heat and allow to cool.

Transfer the lentils and rice to a bowl and stir in the chopped onion, carrot and garlic, and adjust the taste with salt and pepper. Mix in the chopped parsley and shape into burgers with damp hands.

Heat a grill pan and brush it with olive oil. Cook the burgers on both sides until golden brown. It will take 5-6 minutes per side.

Serve between 2 slices of bread or on a burger bun with a few tomato slices and a lettuce leaf if you prefer.

Also:

Lentil and Pea Burgers

Both lentils and peas are delicious and they make an excellent burger for all those embracing the vegan lifestyle.

Servings: 6-8 burgers

Ingredients:
3 cups canned lentils, drained
1 cup cooked peas
1 cup sweet potatoes, cooked
1/2 cup oatmeal
1 teaspoon lemon juice
1 teaspoon soy sauce
1/4 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon onion powder
Salt, pepper

Directions:

Put the lentils and cooked peas in a food processor and pulse a few times until ground. Add the potatoes and oatmeal and pulse until they transform into a paste. Stir in the lemon juice, soy sauce, cayenne pepper, garlic powder and onion powder. Adjust the taste with salt and pepper and form burgers with wet hands to prevent them from sticking

Heat a grill pan on a medium flame. Brush the pan with olive oil, or another vegetable oil, and cook the burgers on both sides until golden brown. Serve on vegan burger buns with tomato slices, lettuce and fresh parsley for an intense flavor. Enjoy!

Now, we all know the problem with veggie burgers is getting them to stick together. I haven't experimented with any of the recipes yet, so I can't tell you if he's got that part down or not. Here's the name of the cookbook:

She's already complaining about the occasional appearance of lentils on the menu. I'm afraid I might get bitten if I put a lentil/oatmeal burger in front of her. If only there were some way to disguise it as a Porter House steak...
