As to how I'm going to do it depends on what I have in the fridge (will check when I get back home from work). Hopefully, the mushrooms are still edible.

Yesterday's fish and corn chowder came out excellent. I've got plenty leftover for a few bowls for lunch.

Do NOT buy Safeway (store brand) crushed tomatoes.

It has the consistency of tomato paste, or over-boiled red paint. The taste is OK (for 2 bucks, 28 oz. can), but the texture is similar to Ragu sauce that's been on the stove for 10 hrs. Blech.

Stupid me, I'll spend the 4 bucks for the usual San Marzano crushed tomatoes.

So I think a big salad with chopped vegetables and topped with turkey bacon, hard-boiled egg, and honey-mustard dressing.
