Grilled Mahi-Mahi

Ingredients
Mahi-Mahi fillet
Sea salt
Black pepper
Olive oil

Directions
Bring fillet to room temperature. Place on foil and coat with olive oil. Then lightly salt and pepper it. Place on grill and cook over low heat until flakey. Mahi-Mahi needs to cook for longer than you'd think. I cooked it for abut 20 minutes even though it was only about half an inch thick. It's quite dense, so it's pretty forgiving--it's hard to overcook it. I baste it with the olive oil and juices it gives off.
