what's for dinner - wednesday, august 27th

i'm thinking the leftover chicken will get tossed into a pot of mac and cheese with a can of rotel. mac and cheese with tuna and salsa is one of my comfort foods, but it horrifies the husband, so this is a reasonable compromise.

Just the kind of "slop" that I love. I'm heading for the veleveeta and cheese when I get back to the US.

We had an interesting variation on minestrone. Mixed with water, add rice and cook, add cheese and basil, then let cool to room temperature. It came out as a rather solid dish, not unlike a cold risotto with lots of good stuff in it.

Very filling and apparently a staple for lunch in Milano during the summer.

another one of my favorite slop meals that my husband won't let me eat is tuna gravy and cornbread. it's exactly what it sounds like and looks really unappetizing, but it is oh so tasty.

The thing I have to do behind my husband's back is fast food. He is absolutely "repulsed" by it, so I sneak around when I am in the states.

However, if I bring home some Popeye's, it will disappear magically!

just discovered a very good Kale 'superfood salad' at grocery, includes blueberries, sliced onion, walnuts (I could live without that) in light vinaigrette? dressing.

9. Angus beef hot dogs w/dijon, relish, on rye. Kidney beans w/some spicy BBQ sauce. Sliced watermelon.

Zucchini Pancakes

1 pound zucchini, grated
1/2 tsp salt
1 small onion,grated
1 T freshly shopped basil
l lg clove garlic, grated
1/2 tsp pepper
2 eggs, well beaten
1/3-1/2 C parmesan cheese
1/2 C flour

Place grated zucchini in a colander and toss with salt. Let sit for 15 min. and press down on zucchini to push out moisture. Place in bowl. Add onion, basil, garlic and pepper. Mix well. Add eggs and mix. Add cheese and flour and mix.

Heat griddle or large skillet. Test it by dropping a couple of droops of water; if it sizzles it is ready.
Coat griddle with oil or cooking spray. Drop by spoonfuls onto pan. Cook until brown on bottom and flip. Cook until flipside is brown.

so cheese sammich and room temperature coffee.

I cracked open a watermelon from the garden earlier in the day - all 4 inches across of it. I really totally did a swing and a miss when I picked that varietal - I thought the fruit were supposed to be 8-10 inches across, not 4-5. After digging out all of the seeds, the dogs and I only got a few mouthfuls apiece. Still, they did better than the honeydew, which never did fruit this year.

and earlier in the day, I made a salad for tonight. It is called Egg, Celery, and Radish Salad with Tarragon Sauce and it has creamy dressing made with sour cream, regular whipping cream, lemon juice, and chopped tarragon. As a green, it uses watercress. I've already had some and it is very good. The egg really makes this salad. Great combo with tarragon. I got the recipe from some monk's cookbook.

I just wish my garden tarragon had grown a little better. It doesn't seem to have grown any since I bought it in the spring. I used it all up making this salad!

and I just finished the next to last serving of a rotisserie chicken. The last one will be chicken salad or chicken noodle soup.

But tonight I made cream of chicken soup. Since I'm also partial to cream of celery and cream of mushroom, I threw those in there, too.
