What's for Dinner, Tues., Oct. 7, 2014

I know, I know - it's still a little early in the day for many cooking fans here. But one great benefit of being retired is having the time to look in the fridge and go mmm, what's for dinner?. Plus I eat dinner early at home, snack later.

We'll probably nibble on the Crockpot Carnitas, and maybe make up the little pumpkin we roasted the other day into a pie.

There is some chance we'll do the prep-work for Beef Stew in a Pumpkin shell.

I have some leftover 7-bone steak (which was really thin, I grilled at 1-min per side), which I'll warm up with lime, garlic and Serrano chili. Topped with pico de gallo. If I don't have black beans in the pantry, then maybe a simple salad with a sour cream/hot sauce dressing.

I'll figure it out once I get home from work.

It's an old recipe from Mollie Katzen's Enchanted Broccoli Forest. I'm using shirataki noodles, which I will marinate in garlic and olive oil for a few hours before using them.

I can use some of my home-grown horseradish in this dish! I haven't used it at all. I've been a little "gun shy" since my jalapeno pepper incident. I don't want to burn my hands, but thanks to all the good advice given me by fellow DU-ers, I am now well equipped with the right kind of gloves.

I really look forward to going up to my garden and harvesting and preparing it.

Pinto, my two cents worth is that it's a good idea to put the thread up early. If you notice the "views," this thread always gets a lot of them. I think the earlier it's posted, the easier it makes for people to post. If the thread's not up, some posters might not stop back. Since it seems we're a "more the merrier" type of group), I think posting the thread early makes that easier.

Yes, I know we occasionally get the "I don't know! Too early!" type of response, but really, they don't have to respond on the post until later if it is too early for them.

So I changed my mind. I thought chili sounded like a better idea, so I'm making it with toppings like guacamole, cheddar, chopped onion.

Salad to go with.
