what's for dinner - sunday, october 19th

i jettisoned the baked chicken last night in favor of cheddarwurst with caramelized onions and saurkraut, so we'll do the chicken tonight. i'm going to bake the thighs on a bed of potatoes, carrots and brussel sprouts. i am already drooling

potatoes cooked briefly, drained, added a few green onion tops, few pats of butter, salt and lots o'pepper.

Since I had 4 children under 7, I made mac & cheese--sauteed a little onion in butter, add a little dry mustard, then made a roux, added warm milk and lots of cheese. This is my favorite recipe for mac & cheese. It is fluffy, and very cheesy. The 7 yr. old tasted it, thought the stuff in the blue box ("the kind my mama makes&quot is better. Flat green Italian pole beans. Cherry tomatoes with onion and balsamic vinaigrette. Huge fruit plate with lots of grapes, oranges, apples--mostly for the children.

For dessert, I made a Hot Fudge Sundae Cake (Betty Crocker recipe) served with vanilla ice cream. This recipe holds a lot of memories for me.

When my family lived in Germany in 1959-1962, there was a family friend, who had many children, who could whip up this cake at the drop of a hat (along with her wonderful potato soup) and serve an impromptu dinner to a whole crowd of folks that showed up at her home around dinnertime. She was one heckuva woman and had the grace and skill to make a big, memorable meal from potatoes and tin of Hershey's cocoa, plus a loaf of the finest bread from the local German bakery. I remember that meal as a real feast!

9. On a whim I bought this "chef's assortment" of mushrooms. Some very familiar, but one unique to me.

Multiple little fan shaped tops coming off one stem. Tried one - really tangy along with the mushroom taste. All's on a slow simmer now and it smells great.

From my sampling, this would be good without the sausage.

The bolognese cooked for most of the day and is smelling pretty outstanding.

Welcome home dinner for the son-in-law.

We also picked up some locally made salted caramel ice cream for dessert. That I can hardly wait for.

17. Leftover chicken curry & rice.

I made the curry a few weeks ago, froze some of it. Thawed it out today, cooked the rice up. Actually, the amount I froze is two generous portions, so it'll be one of tomorrow's meals also.
