it'll be after ten before i get home, so it'll probably just be mac and cheese tonight. i am shooting for from-scratch, but there's a couple boxes of kraft in the cupboard.
my best of besties and her guy are visiting from germany for a couple of weeks and i am so excited to cook for them. i'm going to do bbq pulled pork thursday, i'm hoping to do my famous grilled steak sandwiches while we tailgate for the csu rams football game saturday and i have the fixings for a roast for them one night before they leave. nothing fancy, just good home food.

(14,733 posts)Pulled a few peppers out of the freezer, let them that, then realized if I'm going to use previously frozen peppers, I need to cut them when they're still mostly frozen. They get a bit mushy if you let them thaw entirely before trying to cut em.

* Lime this time because I was out of Lemon. It's pretty tasty!

(35,654 posts)Picked up a gorgeous, huge, fresh romaine, and I have red lettuce from the garden to mix in. Will top with turkey bacon, which I bake in the oven. I make an entire package at a time to have for crumbles on soups and salads.
I'm cooking tonight, but I don't think I'll get much of anything finished. It is groundwork for the next few days. The things I'm making are:
--cauliflower crusts to use for pies or pizza in the coming week
--Tuscan bean soup, made with borlottis
And then if I have enough energy, I might tackle making some ketchup and BBQ sauce.

(146,218 posts)The Satire Lounge is a place I dream about, literally. And when I do, I eat one of my favorite dishes in the world and love every bite of it.
And every couple of years, I get to have it for real. Tonight was the night.
A beef and sour cream burrito, smothered with green chile, cheese and topped with lettuce and tomatoes for me and a couple of beef tacos for my mom.
It was as good as it was 40 years ago when I first tasted it.
I am in heaven.
Will be eating Amtrak food for the next two days and I am interested to see how it is. I'm not optimistic, but I would love to be pleasantly surprised. Will report back!

(on edit) My usual MO though is a big breakfast and snack the rest of the day.

(146,218 posts)Because we had a sleeping car, we had all our meals included and I was pretty impressed across the board.
And, I agree, the ride was beautiful, particularly from Denver to the Utah border.
