I'm still eating lightly, but will be roasting chicken and veggies for Bill tonight and may nibble a bit when it's done.
What's for dinner where you are?

(20,234 posts)it's marinating right now in lemon juice, thyme, and lemon zest. The zest is exciting - it's my first time using my new (from the thrift shop) impulse-purchase zester. And some more roasted okra and homemade cole slaw.
I'm low carbing but I might make a small herby biscuit for the husband. He earned it - he retrieved a student's phone card that was stuck in a memory card reader for me yesterday, and today I brought home a VCR from which he retrieved a stuck video tape of a student's deceased father (she was horrified that she brought it to class and then it wouldn't eject from the VCR). He's not dieting, but by default he ends up not getting dinner carbs generally because I cook and I'm dieting. I'm really impressed Lucinda, with the effort you put into meals when you can't enjoy them.

(135,060 posts)with oven fries for my son and and fresh steamed broccoli and carrots over rice. Just edited because my dd told me she wanted rice not oven fries.
Sorry you're still not feeling well.

(50,130 posts)Made the sauce in August and froze it. Today seems a good day to get it out. I'll use corn tortillas, the shredded leftover chicken, some sliced scallions, a bit of frozen sweet corn, black olives, and cheddar cheese. Serve with sour cream and some jarred jalapenos.
I realized that it's time to start using the summer bounty that's in the freezer. I have lots of green tomatoes, lots of blackberries and blueberries picked in the summer. Cherry toms that I stewed, and so on.

(28,791 posts)I got great tips from you guys for the hot wings.. I had drumsticks so that's what I used
Family pack of 16 drumsticks
2 c. whole wheat flour
1 t garlic powder
1 t cayenne pepper
1 t. salt
1 t. paprika
mix and shake pieces to coat - return to fridge for 2 hours
preheat oven to 425, bake on cookie sheet 15 min. turn down to 400 for 30ish more min. or until done
cool 10 min.
1/2 cup melted butter mixed with 1/4 to 1/2 cup hot sauce
toss to coat.
I had Red Devil in the fridge, and not enough so they were a little weak, but the foundation is there.
Next time I'll try the Frank's, and marinate them, then do the dry coating.

(12,051 posts)all day, and Mr Nay had to stick it in the oven at noon. Boy, did the house smell good when I got home!
You're right. The aroma from bourguignonne is a real pleasure. What cut of meat did you use for it?

(163,986 posts)I made a chocolate cream pie first because desserts have been lagging. Then, I had to turn a vat of stewed tomatoes into pasta sauce before they went to waste. Then on request, a caulflower cheddar gratin -- that recipe topped with horseradish cracker crumbs. (The cheese sauce is wonderful.) Finally, for dinner I revisited that Jamaican spicy chicken and chayote stew, to see if I could get the veggies firmer. Still not done as there are two chicken breasts to braise for tacos tomorrow. My feet feel like I should be wearing a name tag and a funny hat. But, the kitchen smells good and there's pie after dinner.

(50,130 posts)I remember so fondly how she described her marathon cooking sprees. I love days like that. Unfortunately, I don't feed that many people any more, so the marathons are far between. When I was feeding two teenagers, two toddlers and five adults plus baking pies for the coffee house a few years ago, I was hoppin'.

(163,986 posts)I've never cooked for more than four routinely but our family holiday dinners used to be huge and those were fun to put together.

(9,791 posts)I had a doctor's appointment this afternoon so I made a batch of fried chicken this morning. Cheddar broccoli rice and steamed peas were on the side. My b-i-l had surgery and was discharged yesterday and I wanted to feed him too. The poor guy isn't up to cooking yet and I can't let him starve.
