In Lucinda's absence (and because these are such cool threads)....so, what's cookin', folks?

As some of you may know, yesterday Sue and I started the Engine 2 28 day vegan challenge.

So tonight I made a vegan Farro Jambalaya - it was just great - will share the recipe if anyone is interested.

All vegetarian empanadas, queso fundido with mushrooms and grilled onions, guacamole, a tomato soup with corn and chile and avocado, Mexican chocolate cake with raspberry and caramel sauce a sprig of mint and a scoop of vanilla ice cream for dessert.
