What's for Dinner? ~ Friday January 27th!

I roasted chicken yesterday, so I'll be making something with it...
I'm thinking either King Ranch Enchiladas or maybe pot stickers.

I've mentioned the King Ranch variation on the enchiladas before. You make them with chilies and tomatoes, cheese, and a creamy soup base, with corn tortillas. They are much much better than that makes them sound. They are spicy and creamy with that great roasted corn flavor. Muy yummy.

What's for dinner where you are?


Never got to them. Just nibbled on a stuffed baked potato tonight, so the enchiladas will be Sat night!

Supper will be nibbling on what's available at the hospitality suites. DH will be pullling a meatloaf slice or a salmon pattie out of the freezer (he doesn't do politics).

all washed down with buttermilk. My husband is working seasonally doing taxes for H&R Block until 9:00 pm, so I will be eating alone. It reheats well .

Mr. K has requested 'breakfast for dinner' so i'm using up the leftover mashed taters from the meatloaf experiment night and making potato pancakes, eggs, bacon and toast

why not use the fresh bacon grease you ask, rather than that stuff in the fridge?? because i only have already cooked hormel bacon in the house......

Quick, easy, inexpensive, and very yummy.

We never have mashed left over to make potato pancakes with but they are really good. I have dinner envy!

I made oven fried chicken with a mix of breadcrumbs and crushed cornflakes for the coating, cut some leftover baked potatoes up into "cottage fries" and fried those, and threw on a pot of potato cheese soup, then sliced up a ripe melon. I even threw in some chicken livers to cook for the dog.

The chicken was from my seemingly never-ending supply of frozen poultry from last summer. Even though I processed them in July, it looks fine, no sign of any freezer burn.

So, that is waiting at home tonight. Just need to make some kind of salad. This will be friday and lunch saturday.

Gingered rice on the side, but a spicy burned piece of pork, diced and sliced, as the key. With whatever veggies are in the fridge.

This morning, I decided to drain the excess liquid into a pan, turn on the heat, and let it reduce. I threw in some extra rosemary, since it was kind of flat. I tasted it before I put it back into the refrigerator, and it was definitely improved. It was what I was aiming for in the first place.
