What's for Dinner? ~ Sunday January 29th!

Allo everyone!
Hope you are all having a wonderful weekend.

I think we will be making pot stickers with the leftover chicken I have. It cleans out the fridge and will be yummy all at the same time! I am a little reluctant because I don't have my favorite soy... its a thick, rich, mysterious brew that I have to buy online.... Pearl River Bridge Superior Dark Soy Sauce. It's the best I have ever had. Bill may make his twice cooked pork sauce for dipping, since we just have "normal" soy.

Spouse mentioned grilling it but I think it would be easier just to fix it inside. But I am buried in work so I'm not complaining!

I have not heard of the soy you mention. We are having to be low salt for a while so I'm avoiding stuff like that (except when *I* eat out which does not get mentioned around here - hee hee).

Baked chicken legs (25 cents/pound)
homemade coleslaw (cabbage - 25 cents/pound)
roasted yellow squash (not 25 cents, but a 3lb bag was 99 cents)
avocados (5 for a dollar today)

Nothing fancy, but it's cheap healthy eats.

I'll have leftovers so I'll keep some for this week and freeze 2 portions for another day. Also made a cucumber, onion and tomato salad. I'll have a little of this tonight and get some feta tomorrow and probably have a couple of times for lunch.

I've never made pot stickers...is it difficult or kind of like wontons?

We are weird about the fillings though.

Most recipes call for raw chicken or pork but we always use precooked meat in the mix. The pot stickers cook so quickly that we aren't comfortable with raw proteins. So basically the filling is prepared, the wonton wrappers filled and sealed, then they get a quick fry and steam, and they are done.

Bill wipes the pan with a light oil coating, then browns the bottoms for 2-3 minutes, adds a shot glass full of chicken stock to the pan and covers for another 2-3 minutes. Then repeats the process until they are all cooked.

I've been craving them for a week or two and they just don't look good in the store. I may have to try making something light with frozen berries soon.

a great smell--my standard for a good strawberry. I didn't get any because I need to use up those homegrown ones from the freezer, but my niece said they were very good. Maybe they're in your area grocery as well. So much better than those mammoth tasteless ones from CA.

vegan strawberry "ice cream" with vegan chocolate chips for dessert.

Tuesday makes one week on the Engine 2 challenge.....most days it's been fine - this meal (tonight) certainly missed the butter, at least a bit - though it tasted good and "clean".

It's actually going by fast and we are feeling great!

to remedy it without meds - mine could use a bit of fine tuning. Plus I am coming off a 50 lb weight loss on WW and got stuck - so thinking that the 28 day challenge could finish the task and get me close to my target.

After we are done, I suspect we will continue as we always have, primarily veggies/grains/legumes, but bring back the occasional seafood and chicken. Thinking of keeping dairy minimized - but the odd egg here and there in some cooking.

and there are some dishes that it's just really hard to get right without a bit of one of them in it.

Wife says she hates meatloaf.

I'm making her MY meatloaf. She's never had it before. Her biggest complaint is that it's always dry. I pan sear mine before baking.

I'm not telling her it's meatloaf. I'm telling her it's a play on a Pennsylvania Dutch dish called porcupine balls which she likes.

Fingers crossed...

mine is a pinch of knox gelatin (and I mean just a pinch!) in a 1.5lb loaf. Only with lean ground meat tho, if it's high fat I want it to cook out. I just cover it so it won't get dry.

I've never tried pan searing, seems like it would be tricky to keep it from falling apart..?
But I don't handle mine much, so it's not really compacted until it goes in the pan.

I put a whole glass of some leftover California zinfandel in the meat sauce when I was cooking it the other day. It's really good and smells lovely.

Some really good grated peccorino romano, some fresh-baked Italian bread for those who can eat it, and a chopped salad of broc, cauli, english cuke, lovely radishes, flat-leaf parsley, grape tomatoes, red onion, and a black-pepper vinaigrette.

Looking forward to it and an evening of Public Broadcasting! Michael Palin on the Silk Route, and then Downton Abbey. Wheee!

And the house smells luscious -- our favorite oatmeal cookies just came out of the oven.

I seem to remember it from my LC days. I never did try any, though I heard it was really good.

Sounds like it was a wonderful evening! I've always enjoyed Michael Palin's travel shows when I could catch them.

I'll mention Dreamfields to him.
I pretty much just eat stuffed pastas like ravioli if I use noodles at all anymore, so I have never really tried it, but I had heard about it.

That reminds me I need to send him the lowcarbfriends website link too!

I bought some ground beef the other day, so I made those into patties and then seasoned and cooked in a cast iron skillet. Then in a separate skillet I sauteed some sliced mushrooms and onions. I had some mashed potatoes in the fridge from the other days. So the plate was mashed potatoes, topped with hamburger patty, topped with mushroom & onions. I squirted a little Worcestershire sauce on top. A cup of Chobani peach yogurt for dessert.

I have a bunch of mushrooms on deck for tonight, if I eat dinner. I'm thinking about using them in a pot sticker filling.

I chopped up eight Roma tomatoes to dump into a pan of sauteeing olive oil and garlic. After adding a half pound of cooked Barilla Fiori pasta to the pan I sprinkled shredded asiago and cubed fresh mozzarella on the whole combo. It was fast, easy and delicious!

There is something about roasted or sauteed tomato that makes me very, very happy. I don't care for traditional red sauces, but when you roast them or quickly fry them, it's soooo good.
