Cool and rainy here. I have a turkey tenderloin, so I'm making turkey-egg noodle soup for tonight.
Using almond flour, cranberry lemon muffins to go with it. Tossed green salad.

(146,218 posts)I loved this soup as a child, as well as the thrill of eating in the senate dining room. I've got leftover ham, so it's the perfect opportunity to make it.
The last of the caesar dressing needs to be used, so that is a good side.

(106,886 posts)Somehow I ended up with more onions than any one person should have on hand and the rest of the ingredients in stock, so that's the plan.
I love egg noodles, have a good turkey noodle dish!

(4,482 posts)This is the first time I've made this Allrecipes dish. Hope it turns out OK.
I used a new, for me, ingredient, Kerrygold Garlic & Herb butter to saute the onions. It contains chives, parsley, garlic, salt, dill, pepper & paprika.
Some of the reviewers in Allrecipes thought the recipe was a little bland, so the Kerrygold butter should give it some flavor.

(22,767 posts)Oooooh! Cranberry lemon muffins sound sooooo fabulous. Two of my very favorite flavors. I happen to have cranberries in the freezer. Gonna have to pick up some lemons this weekend.
Do you have a recipe for them you'd maybe care to share?

(35,625 posts)I don't know if you've tried a grain-free recipe or not--this one uses almond flour. My two cents worth is that almond flour is so much more tasty than wheat flour. You can buy it at any supermarket; Bob's Red Mill is what my local market has, but Elana doesn't like it (Elana's is the big grain-free baking site on the net). I make my own almond flour in my blender. So easy.

Cranberry Lemon Muffins
2 cups blanched almond flour
½ teaspoon celtic sea salt
1 teaspoon baking soda
1 cup dried cranberries (I used thawed frozen ones)
½ cup grapeseed oil or palm shortening
3 large eggs
½ cup agave nectar or honey
1 teaspoon lemon zest
In a large bowl, combine almond flour, salt, baking soda and cranberries
In a smaller bowl stir together oil, eggs, agave and lemon zest
Stir wet ingredients into dry
Spoon batter into a paper lined muffin pan
Bake at 350° for 25-30 minutes
Cool and serve
Makes 12 muffins
These gluten-free, dairy-free muffins are on the sweeter side and make a nice festive dish for a brunch or a healthy dessert for a potluck. Because they are more liquidy than usual they will sink just a tad after you remove them from the oven.

(24,146 posts)we almost never eat beef at home, but every so often i drag my husband down the dive and get a mushroom swiss bacon burger. their burgers are better than anything i've ever made for myself and they have the best fries in town.
i'll see if i can talk me into taking me for lunch on sunday when it won't be that busy.
