What's for Dinner, Wed., April 15, 2015

Working late, but I have some beans soaking for a quick pressure cooker soup. The RG already did the broth for me; all I have to do is add some vegetables. The broth he made already has ham in it.

Tossed green salad.

1. Beans and rice topped with some green chili salsa. Sliced tomato, cuke, radish and romaine salad.

2. Asian pork chops

"Asian" for lack of a better word... Hoisin, oyster and soy sauces glaze for the chops. Some stir-fried veggies over noodles (bok choy, celery, carrots, green onions). Maybe I'll throw in a chili or two.

3. Ribeye steak, baked potato, corn.

4. chicken curry

5. I made a big batch of spicy Mexican Rice today

so I took some out and am having a green pepper stuffed with the rice and I added some Monterey Jack cheese. Keeping it vegetarian today.

6. Just about to the end of the beans.

Probably one good serving left for husband's dinner tomorrow night. I'm still surprised at how much I actually enjoyed them this time and wouldn't mind having them this way again, just not right away.

Sounds like some very well coordinated tag team cooking going on at your place.
