I have class until 10 p.m. tonight, so I won't be home until around 11. Already made is a tossed salad with fennel, cucumber, and scallion, and I'll put shaved parmesan over it.
After that, some of the leftover short ribs
A chocolate truffle for dessert.
That should about do it for a very late-night meal.

(3,744 posts)I'm just gonna fix a couple of beef hot dogs, grill them in a cast iron skillet, and some chips. I feel like going simple tonight. I have a stress test to take in the morning so can't eat or drink anything after midnight, not even meds! I'm going to enjoy the doggies.

(146,218 posts)I've got some good bacon and could make pancakes or crepes. I've got half an avocado, but not much else in the way of produce. I do have some frozen berries, so that might be good with the pancakes.

(2,682 posts)Several months ago, when we had one of those rotisserie chickens, I took the bones and made a soup base and froze it. When rummaging around the freezer for something for dinner, I found the frozen soup base. I also had a bag of stir-fry veggies from Costco. So I thickened the soup base with a bit of flour and water, heated a heap of veggies in it and served it over some baking powder biscuits I made. I don't often cook with spices so just a shake or two of salt and a whisper of pepper was all I wanted. Comfort food!
