Whats the difference between a salad and a composed salad? From the French salade composée, a composed salad is simply salad arranged on a plate rather than tossed in a bowl.
But for the American cook in summer, it is much more than that: a back-pocket lunch or dinner that can be endlessly reinvented and served to many people at any time. It shows off the intense, irresistible vegetables, herbs and fruits of the season but can also have rich components like cheese, eggs, toasted nuts and smoked fish or meat. With a loaf of (preferably grilled) bread, it is a meal in itself.
Like the V.I.P. pass at a music festival that gets you a folding chair and access to a charging station, a composed salad provides a little extra organization and luxury, but still holds the wild spirit of summer.

I copied and pasted this into a Word file so I could experiment with it. This is just my style for dining. Nothing, not even dessert!--can measure up to a salad, in my opinion.

(130,825 posts)and I post stuff from the NYTimes. Like them or not, they know something about good food!!! (My Dad was born in NYC, grandpa ran a deli, so it's in the blood, I guess!)
Having a party next month so sampling items from nearby restaurant/caterer, and yesterday I tasted their Broccoli Medley Salad. Its FAB! Contains cranberries, croutons, and a light creamy vinaigrette, great beside crab cakes!!!

(20,453 posts)Honestly, since getting the home renovation last spring/summer, which included a poured patio, I am looking for a nice way to enjoy a spread. This really gives me the idea to do some things on the Weber (like smoked salmon) and then assemble it with the fruits of the season. I love the idea
nuts, cheese, greens, some smoked fish and
um.. Am I forgetting something? Oh, yeah, good beer!
