What's for Dinner, Sun., May 24, 2015

Stuffed green pepper (stuffed with ground lamb and vegetables in tomato sauce). The RG made the lamb bolognese part, and it's delicious.

Earlier in the day I made a couple vegetarian dishes. Because the savory vegetable cake I made the other day was so good, I made another one. This is sliced zucchini, summer squash, and carrot baked in eggs and coconut flour in a glass baking dish. Herbs added, of course, and this time I changed the herbs from just basil to a mixture of basil, oregano, and dill.

Also made zucchini pizza crust for tomorrow or another evening in the coming week.

I also adapted another recipe I tried last week. I made slaw with pineapple and Asian cabbage with toasted almonds. I wanted more, but all I had left were some Savoy cabbage leaves from the outside. I had saved them for plate decor. I cut them up and sure enough, they were too tough for a dish and would have been better off as plate decor.

Not wanting to go to the store, I parboiled the leaves for a minute and then plunged them into ice water. Then I made the rest of the salad, using chopped pineapple and almonds that instead of toasting, I baked in a convection roast oven. They turned out so well! A beautiful brown all over. My first effort was good, but this was better. So there you are: two tips. Almonds in a convection oven roast of 450 will give you a better color than toasting, and throw-away leaves from the outside of a Savoy cabbage can make a delicious slaw if parboiled.

baked chicken breast basted with Korean BBQ sauce,
stir-fried onions, carrots, red bell peppers, water chestnuts and pineapple,
and jasmine rice. Yum yum!

2. homemade Goulash

1 bunch of green onions diced
1 small white onion diced
1 can petite diced tomatoes
2 small cans tomato sauce
1 cup brown sugar
1 lb ground hamburger

1 package elbow or shell noodles


Cook noodles as directed- drain and set aside

brown burger, drain and add brown sugar, onions tomatoes and sauce. Cook for 5 minutes

combine burger mixture and noodles

serve with toast or rolls.

Sunday lunch at our house: chicken pie, sweet potatoes, green beans, tomato/pepper salad, spinach "souffle."

Cut in half inch slices, dredged in flour and quick fried. Deglaze with mushrooms, lemon and capers. Oven fries and steamed cauliflower on the side. We've simplified our cooking a lot lately.
